Today we're talking about the cookies that Logan has loved as long as he has been able to eat cookies. These Cinnamon, Spice and Everything Butterscotch Chips Cookies are so soft and chewy and delicious that I have never been able to eat just one.
I've brought them to work and everyone who has had the privilege of sharing these cookies with me has found them irresistible. They may not look like much but they taste kinda like gingerbread, only about a 1000 times more chewy and chock full of deliciousness. :D
1.5 cups margarine
2 cups white sugar for batter, 1 cup sugar for topping
2 tablespoons vanilla extract
1/2 cup molasses
4 cups all purpose flour
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground nutmeg
2 teaspoons ground ginger
1 tablespoon cinnamon
1 package of butterscotch chips
Yield: 60 cookies
Preheat oven to 350F or 180C
In a large bowl, cream together the margarine and 2 cups sugar until smooth.
Beat in the eggs then stir in the vanilla and molasses.
Combine the flour, baking soda, salt, nutmeg, and ginger.
Stir into the sugar mixture until well blended. Mix in the butterscotch chips.
The dough will be stiff. Roll into walnut sized balls and roll them in the remaining 1 cup of sugar. Place cookies 2 inches apart on ungreased cookie sheets and flatten slightly with a fork.
Bake for 8-10 minutes or until the tops are crackled.
Let cool on the baking sheet for a few minutes before moving to a wire rack to cool completely.
Delicious. And perfect for a nice autumn evening snack. :)
