Food Friday: Porcupines

I love porcupine meatballs. All that rice sticking out like a porcupine. So Delish!

Another family fave.

Ingredients:
Lean Ground Beef
2/3 cup of long grain white rice
1/2 cup water
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1/4 teaspoon garlic powder
sprinkle of pepper
2 cans of condensed tomato soup and water to fill both cans
2 teaspoons Worchestershire sauce

Method:
Mix ground beef with rice, 1/2 cup water, chopped onion, seasoning salt, garlic powder and pepper.
Shape mixture into large porcupine looking meatballs and place into 9 by 13 inch baking dish.
Mix the remaining ingredients in a bowl and pour over top of meatballs.
Cover and bake at 350 degrees F for about 45 minutes.
Uncover and bake for an additional 15 to 20 minutes.
Serve over rice or pasta.
